I have a large selection of dried fruits and nuts in my pantry at all times. I just adore them.
I love the combination of fresh fruit, chewy sweet dried fruit and crunchy nuts in my salads. I’d say, I probably make a version of this salad 3 nights a week.
I mix it up, using whatever fresh fruit is in season. I add dried mangos, apricots, candied orange peel, dates or peaches. And I switch out the nuts and use brazils, cashews, almonds, pine nuts, pecans or candied ones.

FOR THE SALAD
2 packs Butter lettuce
1 large red apple cut into chunks
1 large green apple cut into chunks
1 hard bosch pear cut into chunks
½ cup of dried cranberries
1 cup of walnuts pieces
1 cup of dried figs cut into slivers
1 pack of blueberries
1/3 red onion sliced into thin semi circles
FOR THE DRESSING
1/3 cup olive oil
1/3 cup balsamic vinegar
1/3 cup brown sugar
1 TBS mustard powder
1 TBS minced garlic
Lots and lots of salt & black pepper
Cut the apples and pears into large chunks. Slice the onion into thin slivers. Coarsely chop the dried figs.
Place lettuce on a platter. Arrange apples, pears and onions on top. Sprinkle with cranberries, blueberries, dried figs and walnuts. Drizzle with dressing and serve.
CHEFS TIP
If you are cutting pears and apples ahead of time toss them in a little bit of lemon juice to prevent them going brown
