This vibrant, antioxidant-rich dragon fruit smoothie tastes just as good as it looks.

It’s the perfect fruity smoothie to make year-round for breakfast or as a snack.

What is a dragon fruit??? Appropriately named, the fruit’s outer skin is cactus-like, resembling that of the scales of a mythical dragon.

According to the internet “PITAYA” originated in Mexico but can also be found in many parts of South East Asia. You can’t miss them. They are bright pink or red outside; with a white or pink inner flesh that resembles the texture of kiwi.

You can find them at most specialty Asian stores or buy them frozen in little pouches. They have tons of fiber and so many anti-aging and health benefits. But I like them cause they make the most gorgeous colored smoothies.

This one has dates, bananas, and strawberries and it tastes better than any dessert.

But the protein powder will help stabilize your sugar and keep you going till your next meal.

Who says you can’t have a cocktail for breakfast ??

Scale

SERVES 2

Instructions

Place all ingredients into a blender. Blend until smooth, adding more liquid if necessary.

Pour into glasses and serve.
